Bigi's Bolani in Reseda
Bigi's Bolani is one of Afghanistan's most cherished traditional street delicacies. We roll unleavened dough paper-thin, stuff it with a savory mixture of smashed Yukon gold potatoes, chopped fresh leeks, scallions, ground coriander, black pepper, and sea salt. Folded into half-moons and seared on a dry, oiled chrome flattop griddle until blistered, golden, and shatteringly crisp on the outside while remaining tender inside. Sliced into generous triangles and served with our scratch-made garlic yogurt and fiery green cilantro chutney. Naturally vegetarian, immensely comforting, and baked fresh daily in our Reseda kitchen.
